بستنی یکی از محبوب ترین دسرهای منجمد در جهان است .پایدارکنندهها گروهی از بیوپلیمرها هستند که باعث ایجاد نرمی در بافت، کاهش سرعت ذوب شدن وکاهش رشدکریستالهای یخ در بستنی میشوند و به موجب این عملکردها نقش بسزایی در ویژگیهای کیفی بستنی دارند .البته مهم ترین نقش این ترکیبات در بستنی ممانعت از رشد کریستالهای یخ در طول نوسانات دمایی در دوره نگهداری است .بررسی منابع نشان میدهد، تاکنون هیچ گزارش منتشر شدهای مبنی بر کاربرد موسیلاژ قدومه شهری و قدومه شیرازی، به تنهایی یا در ترکیب با سایر هیدورکلوئیدها به عنوان پایدارکننده در بستنی به چشم نمیخورد .لذا هدف این تحقیق بررسی کارایی دو هیدروکلوئید بومی ایران شامل موسیلاژ دانه قدومه شهری و قدومه شیرازی به صورت جداگانه و ترکیبی با صمغ ثعلب در ۴ سطح(۱/۰ ،۲/۰ ،۳/۰ ، ۴/۰ درصد (روی ویژگیهای فیزیکوشیمیایی بستنی شاملpH ، اسیدیته، افزایش حجم، ویسکوزیته، رفتار جریان، ویژگیهای ذوب و نیز ویژگیهای حسی بستنی بود .نتایج نشان داد که افزودن موسیلاژهای دانههای قدومه شهری و شیرازی اثر معنی داری بر میزان pH قبل از انجماد، اسیدیته و رنگ مخلوط بستنی ندارد .با افزایش غلظت موسیلاژ تا سطح ۲/۰ درصد جایگزینی ویسکوزیتهی ظاهری در هر دو نمونههای بستنی حاوی موسیلاژ قدومه شهری و شیرازی افزایش یافت، به لحاظ ویژگیهای رئولوژیکی نیز تمامی نمونههای حاوی موسیلاژ و نمونه شاهد رفتار رقیق شونده با برش نشان دادند .دادههای رفتارجریان با مدلهای قانون توان و هرشلبالکی به خوبی برازش داده شدند، اما با توجه به مقادیر آمارههای ضریب تبیین(R۲) ، میانگین مجذورات خطا (RMSE) و میانگین نسبی مدول انحراف(P) ، مدل قانون توان به عنوان بهترین مدل معرفی شد .با افزایش درصد جایگزینی، مقاومت به ذوب نمونهها افزایش یافت و بیشترین مقاومت به ذوب در بین نمونههای خالص قدومه شهری و شیرازی و ثعلب مربوط به نمونه موسیلاژ قدومه شهری بود .روند افزایشی حجم تا سطح ۲/۰ درصد جایگزینی مشاهده، ولی در سطح ۳/۰ درصد جایگزینی موجب کاهش ضریب افزایش حجم در هر دو نمونه موسیلاژ قدومه شهری و شیرازی شد .بالاترین امتیاز حسی نیز مربوط به نمونههای خالص هر دو موسیلاژ قدومه شهری و شیرازی بود .نتایج این پژوهش نشاندهنده برتری استفاده از موسیلاژ قدومه شهری و شیرازی از لحاظ ویژگیهای فیزیکی شیمیایی، رئولوژیکی و حسی در مقایسه با ثعلب به عنوان پایدارکننده در فرمولاسیون بستنی بود

Ice Cream is one of the most popular frozen desserts in the world. Stabilizers are a group of biopolymers that, in improved softness of tissue, reduced melting and growth of ice crystals, therefor play a significant role. They have effect on ice cream quality. Of course, the most important role of these compounds in ice cream is to prevent the growth of ice crystals during temperature fluctuations in storage time. According to the sources, no reports have ever been made on the use of mucilage Alyssum Homolocarpum and Lepidium Perfoliatum, alone or in combination with other hydrocloids, as stabilizing ice cream. Therefore, the aim of this study was to investigate the effectiveness of Iranian two indigenous hydrocolloids, including mucilage Alyssum Homolocarpum and Lepidium Perfoliatum in the province, separately and combined or replace with salep gum at 4 levels (0.1, 0.2, 0.3, 0.4 ) on physicochemical properties Ice cream contains pH, acidity, overan, viscosity, flow behavior, melting properties and sensory properties. The results showed that addition of mucilage Alyssum Homolocarpum and Lepidium Perfoliatum grains did not have a significant effect on pH before freezing, acidity, colorimetry of ice cream mixture. Increasing the concentration of mucilage to 0.2 viscosity increased in both samples of ice cream containing mucilage Alyssum Homolocarpum and Lepidium Perfoliatum. Regarding the rheological properties, all samples containing mucilage and control samples had a diluent-cutting behavior. Flow behavior data were well fitted with power law models and Herschel Bally, but according to the values of R2 and RMSE, power law model was introduced as the best model. With increasing mucilage percentage, the melting resistance of the samples was increased in the composite samples (mucilage and salep), and the highest melting resistance in the samples (0.4 ) was related to Mucilage Lepidium Perfoliatum sample. Overan by adding mucilages to one (0.2 ) of the observed surface, but increasing the mucilage significantly reduced the volume increase factor in both mucilage Alyssum Homolocarpum and Lepidium Perfoliatum samples. The highest sensory rating was also attributed to the complete samples of both mucilage Alyssum Homolocarpum and Lepidium Perfoliatum. The results of this study indicate that the use of mucilage Alyssum Homolocarpum and Lepidium Perfoliatum in comparison with Sallat as stabilizing agent in ice cream formulation
