Phenolics are bioactive plant compounds found in various fruits and vegetables. They represent the vast number of secondary metabolites compounds produced in plants which may act as antioxidants due to their free radical scavenging properties. Muscadine grapes (Muscadinia (Vitis) rotundifolia) are natural sources of phenolic compounds, which are known for their phytochemistry attributes, organoleptic characteristics, such as astringency, color, bitterness and aroma of wines, as well as their health benefits. The main objective of this study was to evaluate the vinification properties and the healthy qualities of two (2) new muscadine advanced selections, 'Floriana' (red) and A27-10-10 (white), produced under Florida A&M University (FAMU) breeding program relative to the commercial standard cultivars 'Noble' (red) and 'Carlos' (white), with the aim of generating new valuable knowledge for muscadine wines in Florida. Data for phenological performance and reproductive growth stages of all four (4) genotypes were evaluated. Biometrics studies of the cluster and berry physical traits were also carried out. The transformation of the vinification parameters as defined by Compendium of International Methods of Analysis of Wines and Musts (OIV) were characterized in mature berries, fresh juice, musts, and wines. Phytochemical analysis (total phenolic content, total flavonoid content and total anthocyanin content modified into a 96 well micro-method) and antioxidant capacity of the mature grape berries, juice, must and wine was determined. Significant variation was identified as related to each genotype. Result revealed that A27-10-10 as compared to 'Carlos', exhibited a similar ripening time, competitive cluster and berry qualities, better yield performance, and competitive vinification and nutraceutical properties. While, 'Floriana' exhibited an earlier ripening time, competitive cluster and berry qualities, superior vinification and nutraceutical qualities but a lower yield performance to 'Noble'. Overall, the information generated in the research fills the gap and contributes to the fundamental analytical needs of the fast growing muscadine industry in southeastern U.S., (grape growers, medium and small-sized wineries and beginners- winemakers) as well as the food, pharmaceutical and nutraceutical industries.
