تأثیر عایقبندی بر مصرف انرژی خشککن همرفتی در محصول سیب

یکی از مؤثرترین روشصهای استفاده طولانی مدت از محصولات کشاورزی خشک کردن میصباشد که براساس حذف یا کاهش رطوبت در محصولات کشاورزی انجام میصپذیرد .امروزه این عملیات به روشصهای صنعتی سوق داده شده است اما علیرغم مزیتصهایی که روش صنعتی دارد برای تولید محصولات انرژی بالایی را مصرف میصکند .میزان مصرف انرژی در طول فرآیند سهم مهمی در اقتصادی بودن عملیات خشک کردن محصول دارد .در این تحقیق میزان انرژی مصرفی خشکصکن همرفتی در دو حالت بدون عایق و با عایق به منظور خشک کردن لایه نازک سیب بررسی شد .این آزمایشات در خشکصکن آزمایشگاهی همرفتی موجود در آزمایشگاه خواص بیوفیزیکی دانشگاه تبریز انجام گرفت .اثر سه عامل دما در سه سطح۴۰ ، ۵۰ و ۶۰ درجه سانتیصگراد و سرعت هوا در دو سطح ۵/۰ و ۱ متربرثانیه و دستگاه در دو حالت بدون عایقصکاری و با عایقصکاری در سه تکرار در پاییز ۱۳۹۵ انجام گرفت .نتایج در قالب طرح آزمایشی فاکتوریل کاملا تصادفی انجام گرفت .در بین اثرات عوامل مؤثر مختلف بر خشکص کردن، عامل عایقصکاری در سطح احتمال ۱ معنیصدار شد همچنین اثرات متقابل به غیر از اثر متقابل دما-عایق در سطح احتمال ۱ معنیصدار شد .با مقایسه میانگین آزمایشصها با آزمون دانکن بیشترین مصرف انرژی در شرایط دمایی ۴۰ درجه سانتیصگراد و سرعت هوای ۵/۰ متربرثانیه و در دستگاه بدون پوشش عایق دستگاه خشکصکن به مقدار ۲/۱۱ کیلوواتصساعت و کمترین مصرف انرژی مربوط به دو دمای ۴۰ و ۵۰ درجه سانتیصگراد و سرعت هوای ۵/۰ متربرثانیه و با پوشش عایق دستگاه خشکصکن به مقدار ۸/۵ کیلوواتصساعت برای خشک کردن نمونهصها بود .نتایج نشان دادند که مصرف انرژی خشکصکن عایقصدار با سرعت هوای ۵/۰ متربرثانیه در هر سه دما از مصرف انرژی در سرعت هوای ۱ متربرثانیه کمتر بود .در کل با مقایسه حالتصهای مختلف دستگاه نتیجه شد که وقتی عایقصکاری صورت گرفت، مصرف انرژی کاهش یافت .با تقسیم کل رطوبت کاهش یافته به چارکصهای خشک شدن، نتیجه شد که استفاده ترکیبی از چارکصهایی با شرایط مختلف دمایی و سرعت هوا منجر به مصرف انرژی کمتری شده و به بهینهصسازی مصرف انرژی کمک میصکند .طی این آزمایشات بیشترین زمان صرف شده برای خشک کردن مربوط به شرایط دمای ۴۰ درجه سانتیصگراد و سرعت هوای ۵/۰ و بدون پوشش عایق با صرف زمان ۵۳۷ دقیقه و کمترین زمان صرف شده ۱۵۲ دقیقه مربوط به آزمایش با شرایط دمای ۴۰ درجه سانتیصگراد و سرعت هوای ۱ متربرثانیه و با پوشش عایق نتیجه شد .
One of the effective methods of long-term use of agricultural products is drying based on removal or reduction of moisture content in agricultural products. Todays, this operation is driven by industrial methods. But, despite the advantages of the industrial method, it consumes high energy. The energy consumption during the process has an important role in the economics of drying operations. In this research, the amount of energy consumed by the convection dryer was investigated in two non-insulated and insulated dryer for a thin layer of apple. This experiment were carried out in a convection dryer in the biophysical laboratory of University of Tabriz. The experiments were carried out in a completely randomized block design with factorial design. Three factors of experiment were the temperature at three levels of 40, 50 and 60c, the air velocity at two levels of 0.5 and 1 m/s and the two forms of the dryer: non-insulated and insulated. Three replications were carried out for each experiment The experiment was done in year 2017. Among the effects of different factors on drying, the insulating factor was significant at 1 level of probability. Also, interaction effects were significant at 1 probability level exceptthe temperature-insulating interaction. By comparing the average energy consumption of the experiments with Duncans test, the maximum energy consumption was for the experiment with 40 c temperature and 0.5 m/s wind velocity for the devise without insulation which was 11.2 kWh. The lowest energy consumption was for 40 c and 0.5 m/s wind speed in the insulated dryer which was 5.8 kWh. The results showed that the energy consumption of the insulated dryer with an air velocity of 0.5 m/s on all temperatures was less than the energy consumption with 1 m/s. In general, the comparison of the different modes of the dryer showed a decrease in energy consumption when the insulation was carried out. By dividing the whole reduced moisture content to four quarters, it was concluded that the use of a combination different drying conditions in each quarter which has lower energyconsumption helps to optimize whole energy consumption. During the experiments, the maximum drying time spent was for 40 c, air velocity of 0.5 m/s and for noninsulateddryer which was 537 minutes.The minimum was 152 minutes for the experiment of the 40c, 1 m/s and for insulated dryer
