هدف :رویدادهای بسیاری از قبیل شیوع بیماریها و جعل و تقلبها در صنایع غذایی باعث از بین رفتن اعتماد مصرفکنندگان نسبت به صنایع غذایی شده است .وقایعی از این دست، ذینفعان صنایع غذایی را بر آن داشته که یک سیستم قابلیتردیابی برای محافظت از اعتماد مصرفکنندگان ایجاد کنند .هدف این پژوهش و اوی ا است قابلیت ردیابی در صنایع غذایی مؤثرند . این پژوهش میتواند یک چارچوب کلی برای اجرای ص‌سیستم قابلت ردیابی در صنایع غذایی╗ به متخصصان و قانونگذاران جهت شناسایی متغیرهای وابسته به قابلیت ردیابی و اجرای سیستم قابلیت ردیابی در صنایع غذایی بدهد .روش شناسی پژوهش :نوع تحقیق در اینجا از نوع کاربردی است زیرا هدف آن بررسی عوامل مؤثر بر قابلیلت ردیابی در صنایع غذایی با استفاده از روش دیمتل فازی به منظور برنامه ریزی بهتر، افزایش کیفیت و ایمنی مواد غذایی تولید شده میباشد .روش تحلیل در این پژوهش روش دیمتل فازی است که نوعی روش تصمیم گیری برای عملکرد می باشد .زم ا آری ا ر و ان ح ی صنایع تولید کنندهی مواد غذایی در استان آذربایجان شرقی و نمونه آماری ما را مدیران ارشد شرکت آناتا تشکیل می‌دهد .یافته‌ها :از ام ت او و ر ادت و ا و ری اار بر قابلیت ردیابی در صنایع غذایی ا و در ادی از ن دا و اده از اول رد ح و ار . در ا مرحله از ۱۵ ج از ادت و، ۷ عامل ان ری . از ری ا ه و اده از روش د زی و اده از ات ان رده ی زن رد ، ۷ عامل مؤثر بر قابلیت ردیابی در صنایع غذایی اولویت بندی شد که در این بین عامل ص فناوری اطلاعات ╗ به جهت کسب امتیاز ۸۸/۷ ، در صدر با اهمیتترین معیار مؤثر بر قابلیت ردیابی قرار گرفت

Purpose: Various incidents of food adulteration and foodborne disease outbreaks have shaken the consumer confidence toward the food industry. These incidents compel the food supply chain partners to implement an appropriate traceability system in their respective supply chain to sustain the consumer confidence. This research is an attempt to identify and prioritize the factors which affect on implement of the traceability in food industry. This thesis can provide a framework for a traceability system in food industry for experts and legislators to identify variables which are related to traceability and implement of traceability system in the food industry. Research Methodology: The type of this research here is applied since its purpose is evaluating the factors which affect on implement of the traceability in food industry by DEMATEL in order to improve the quality and safety of produced food. The method of analysis in this research is DEMATEL which is a kind of decision making method for performance. It should be mentioned that the statistical population of this research is the senior managers of the food industries in East Azerbaijan Province and our statistical sample consists of senior managers of Anata Company. Research Methodology: After completing the initial studies and considering the literature review, the factors that influence the traceability in food industry were identified and then the most important of them were specified with the help of number of university experts and utilizing first questionnaire. Subsequently seven drivers were finalized, among 15 factors that were identified from the literature review. After refining identified factors, using questionnaire based on grey-DEMATEL and adopting opinion of senior managers of the organization, seven specified factors which affect on traceability in food industry, were prioritized. The information technology, because of gaining the highest score (7.88) comparing other factors, was determined as the most important factor for implement of traceability. Jel: L66, L15, L12
