Contributors from a wide range of medical specialties and sciences summarize current understanding of the interactions between nutrition and immunity, emphasizing the mechanisms of action of the nutrients concerned and the impact on human health. After reviewing the immune system and the effects of nutrition on it generally, they look at individual nutrients, among them fatty acids, glutamine, antioxidant vitamins, iron, and probiotics.
